2021 Pinot Noir: Love Is A Gamble

Tasting Notes: The dark red, ruby color evokes a Burgundian complexity with a measured balance of fruit forward, earthy delights. Aromas of dark cherry, plum, Japanese cedar and a hint of sea salt. On the palate, are notes of dark berries, cherry pie with vanilla ice cream and a touch of cinnamon. Cedar, baking spice and soft tobacco notes delicately dance with candied Italian Marasca cherries, the tannins and acidity drive longevity and ageability.

Technical Notes: Triple sorted to ensure premium quality, 100% whole berry, de-stemmed. Five day cold soak with fermentation on the skins for 2 weeks in temperature controlled stainless steel. Racked to French oak barrels 50% new with malolactic fermentation in barrel and aged for 18 months. Bottled, unfined, unfiltered.
